One of the best books on how sacred symbols came about from a ground up perspective is Robert Lawlor's Philosophy and Practice of Sacred Geometry.
This book is actually a workbook that walks you through the spiritual meanings behind not only common symbols like the pentacle, the circle, pentagram, the spiral, the square and how those meanings change when combined.
It is also a historical lesson on the ancient studies of geometry, astronomy, harmonics and arithmetic. All of which were thought to be as much a spiritual pursuit as an educational one.
